Easy Banana and Oats Loaf Cake

Have a couple bananas that are too ripe to eat, but don’t want to waste either? Try this Easy Banana and Oats Loaf cake, you won’t be disappointed! Its moist and super simple to make. Don’t like Oats or don’t have any? Make Banana Loaf Cake by omitting the oats and keeping the rest of the recipe the same.



It’s so easy to make that my 2 year old boy helped out as well! A great recipe for the family to enjoy.

Freezing

This recipe is perfect for making a large batch for home freezing. All you have to do is wrap the cake tightly in cling film, plastic or foil. I prefer to then put this in a freezer bag as well so that it retains as much moisture as possible without getting freezer burn. This also prevents it from absorbing the smell from other food it might be in close contact with. The cake can be freezed for up to 3 months!

Thawing

To thaw the cake, if you stored it in a freezer bag, make sure you remove it to prevent condensation building up. If you only used cling film, plastic or foil, then this is not necessary. If you have baked the cake as per my recipe above, then this can be thawed on a wire rack at room temperature, but if you decorated it with any icing or frosting, then this needs to be thawed in the fridge. How long it takes to thaw depends on the size of your cake, but usually it would take around 1-3 hours. The cake does not require to be reheated in the oven. However, if you like your cake warm, then you can give your serving portions a quick blast in the microwave.

how crazy! i was just talking to my friend about this because i had FOUR bananas going bad and she told me to look up a banana bread recipe, then I saw this 🙂 how perfect! cant wait to try it!
